This chicken dip happened as an accident. Thankfully though, it happened! You see, it began one evening while we were at the lake. I’d cooked chicken, planning on making a chicken salad for my husband for an afternoon snack/ light meal. We’d gone to the lake on a whim and I hadn’t taken the time that I normally take to plan our meals and pack the groceries that we’d need. I’d just grabbed a few things and off we went.

As I opened the refrigerator at the lake, I realized I didn’t have everything I needed to make what I’d planned. Does that ever happen to you? It can be discouraging to say the least. But, it can also stir my creative juices. Let’s just say, my creative recipe developing juices went into overdrive!

Inoticed that I had cream cheese, Greek yogurt, and a few green onions that would go well with the chicken to make a chickens salad that would be a bit different from normal. Without poppy seeds on hand, I couldn’t make favorite Poppy Seed Chicken Dip. But, with one taste, I wanted something that would add a little bit more of an oomph!

I looked back into the refrigerator and there it was – a jar of my bacon jam! Now, if you’ve not made this bacon jam recipe that I shared with you earlier, please, please, please take this as all the encouragement you need to hurry into the kitchen, pull out your slow cooker and get it started. It is so simple to prepare since the slow cooker does all the work for you, but it is one of those things that I absolutely love having in my refrigerator at all times. Thankfully, I had brought some to the lake as well.

I added bacon jam to the chicken dip and it was exactly what it needed. When the rest of the family took their first tastes, I wish you could’ve seen their faces. Let’s just say, their expressions showed they loved it as much as I did. The empty bowl just proved it! Ha!

With tailgating season and the holidays quickly approaching, I just knew I had to share this one with y’all! It is truly one of the best chicken dips I’ve ever tasted!

Ingredients

  • 6 chicken thighs, or breasts, cooked
  • 4 green onions, diced
  • 1 (8-ounce) package cream cheese, , softened
  • 1/2 cup Greek yogurt , or mayonnaise
  • 1/2 cup Bacon Jam
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Add all ingredients to the bowl of stand mixer. Using paddle attachment, mix on medium-low speed until well combined. Pour into a bowl and serve immediately or store in an airtight container in the refrigerator for up to three days.
