Roasted beets are THE best!

I don't know about you, but roasted beets is probably one of my all-time favorite things to roast. They are so delicious! That sweet, earthy goodness, there's just nothing better. Except maybe when it's paired with fresh citrus zest and fresh rosemary.

Herby aromatics plus sweet orange ... so good! These mouthwatering flavors go so well with roasted chicken, beets, carrots and fennel.

It's one of those meals that you can serve right off of the pan to guests {or your own family} because it's so pretty! Eyes will open so big when they see all of the gorgeous colors staring back at them. You can really feel the LOVE that goes into this meal, even though you don't have to put a lot of work into it.

This One Pan Citrus Beets Roasted Chicken is an elegant, yet humble and cozy meal. The whole dinner bakes on one sheet pan in just one hour!

Ingredients

  • 4 bone-in organic chicken thighs
  • 2 tablespoon cold butter (or other healthy fat of choice)
  • 1 teaspoon chili powder blend
  • 3-4 fresh garlic cloves, minced
  • 2 tablespoon minced fresh rosemary
  • Zest of 1 small orange
  • 4 carrots, peeled and sliced in half lengthwise
  • 1 fennel bulb, core removed and chopped into large chunks
  • 1 ½ teaspoon sea salt, divided (<-- salt)
  • 3 tablespoon butter, melted (or other healthy fat of choice)
  • 4 large beets (or 6 small), stems removed, peeled and sliced into ¼” thick rounds
  • Juice of half an orange

Instructions

  1. Preheat the oven to 400 degrees F. Get a large baking pan/sheet ready and set aside.
  2. Placechickenthighs on baking pan/sheet, spread out at least 3 inches apart. Add ½ tablespoon cold butter to the top of eachchickenthigh. Evenly distribute the chili powder over the tops of thechickenthighs. Set aside.
  3. In a large mixing bowl, add half of the garlic, half of the rosemary, half of the orange zest, carrots, fennel, ½ teaspoon sea salt and half of the melted butter. Stir to combine and spread out on the baking pan. Add the beets and remaining garlic, rosemary, orange zest and melted butter to the mixing bowl. Sprinkle with ½ teaspoon sea salt and stir to combine. Spread the beets out on baking pan/sheet. Squeeze the juice of half an orange over all of the vegetables. Evenly distribute and sprinkle the remaining ½ teaspoon of sea salt over thechickenthighs. Place baking pan/sheet in preheated oven and bake for 1 hour until vegetables are tender andis cooked chicken through with a golden brown skin.
  4. Serve immediately.
