Three easy and tasty Cucumber Salad Recipes to add a bit of crunchy flavor to any meal.

Whether you have cucumbers coming out of your ears, or are just craving a healthy crunch, here are three super simple cucumber salads to satisfy. You’re sure to find one perfect to use for a side dish or even pack along for a light lunch. They are all easy to make and can be made ahead of time by a couple of days, then refrigerated until ready to serve.

Wasabi Cucumber Sesame Salad

This cucumber salad is packed with flavor. It’s one of my favorites! If you like wasabi I think you’ll enjoy it too. It’s zesty and spicy, and with the addition of toasted sesame seeds, nutty too. Toasted sesame seeds—YUM!

Cucumber and Chickpea Salad

This recipe has been a favorite ever since sharing it here. It’s so satisfying and can really be a meal all on it’s own. Dill mingles with lemon, lime, garlic, parsley, red wine vinegar, and olive oil to create a zingy and fresh marinade for cucumber, Bush’s Beans Garbanzos (otherwise known as chickpeas), celery, tomato and red onion in this light dish.

Cucumber Dill Greek Yogurt Salad

Cucumbers combine with Greek yogurt and dill to create a fresh crunchy salad perfect for summer. Mighty tasty. Crunchy, refreshing, and light … what’s not to love? This salad can be made in no time too! Super easy for so much flavor and crunchy goodness. Let it mingle a bit int he fridge to depend the flavors.

    Oh, delish! We just harvest a bunch of Armenian Cucumber – first year to grow them. We’ve tried in the past and they did really bad. This year – fantastic! Happy August, Amy!
